I picked up bannerlord on freebooter after it was in EA about the 7th month and roughly 2 to 3 months later switched to Realistic. It is in fact the best. It is hard to get adept at, but is all the more rewarding for it. And it gives you the basics for multiplayer.

If it's anything one handed, you're going to want to aim really low. Like, aim for guys brushing your feet and aim down at the ground. Configuration saving. I prefer at least setting the character damage to 75%, but you do you. The middle difficulty is ok. Early game is ROUGH at bannerlord, at least imo, but once you get into later game with better gear and higher level you can always increase the difficulty. Or go bannerlord to start and if you hate it then decrease the difficulty!
The AI is designed to get harder per individual character difficulty. A level 30 NPC is more intuitive than a level 3 looter. All the difficulty settings are max. And in the arena, the level 30 NPCs or high level companions really are not much more threatening than any low level NPC. I always keep all the combat and damage related difficulty settings on 'Realistic' and the Unit Recruitment and Campaign Map Movement difficulties on Very Easy -- Because I'm too lazy to make people like me enough to hire their troops. #1.
