In a large bowl, beat the cream cheese until smooth with an electric mixer. Add 1 cup powdered sugar and beat until fluffy and smooth. Add 1 cup raspberry puree (almost all of it! You will have just a few tablespoons left over) and beat until incorporated. In a separate bowl, whip the cream until stiff peaks form.
Cheesecake. Melt the chocolate in a bowl over a pan of simmering water, or in the microwave on short bursts until full melted. Leave to cool whilst doing the rest. In your stand mixer with the whisk attachment, whisk together the cream cheese, icing sugar and vanilla together until smooth.
Crust. Preheat oven to 325 degrees F. Line two standard-sized muffin tins with cupcake liners. In a small bowl, mix together graham cracker crumbs, butter, sugar, and cinnamon. Pour 1 tablespoon of graham cracker mixture into the bottom of each cupcake liner.
For the Cheesecake. Beat cream cheese with sugar in a large mixing bowl for 3 minutes, scraping down the sides of the bowl as needed. Add in freeze dried strawberry crumbs and vanilla extract. Slowly beat in whipping cream, making sure everything is well blended. Spoon cheesecake filling over the crust layer.
Beat the cream cheese and sugar. In a medium mixing bowl, use a hand electric mixer and beat on medium speed the cream cheese and granulated sugar together until smooth and creamy. About 2-3 minutes. Add in the flavoring ingredients. Add in the sour cream, powdered sugar, salt, lemon juice, and vanilla extract.
In a large mixing bowl, combine almond flour, melted butter, erythritol, vanilla, and salt. Stir with a spatula to combine and form a sandy mixture. Pour the crust mixture into the prepared pan and press firmly into the bottom of the pan. Use your fingers or the back of a spoon to smooth the surface.
Using tongs, place one circle in the oil for about 5 seconds. Flip it over and fold it in half holding it folded for about 5 seconds or until browned. Flip over and fry the other side until crispy. Immediately remove from the oil giving it a little shake and place into the graham crumbs if using. Set on a pan to cool.
